Spoon Rolls

Good quick bread when you want something different. Not a biscuit, not a roll, not cornbread…ah! Spoon Rolls!

2 cups self-rising flour
1/4 cup self-rising cornmeal (optional)
2 tsp or 1 pkt yeast
1 cup warm milk
1/4 cup butter – either melted or cup up in small pieces
1/8 cup sugar, honey or molasses
1 egg, beaten

Mix. Will keep in fridge a couple of days after mixed.

To bake: Pour in greased muffin tins. Bake @ 375 for 15 – 20 minutes, or until golden brown. Makes 12 muffins

TO MAKE 6 Muffins
1 cup self-rising flour
3 T self-rising corn meal (optional)
1 tsp. yeast
1/2 cup warm milk
2T. Melted butter
2 T. Sugar, honey or molasses
1/2 egg, beaten (beat and guesstimate 1/2)
